Tuna Cakes

2 cans (6oz each) light tuna in water, drained, flaked
1 pkg (6oz) Stove Top Stuffing for Chicken
1 cup shredded Cheddar cheese
1/2 cup shredded carrots
1/3 cup mayo
2 tbsp sweet pickle relish
3/4 cup water

1. Mix tuna, stuffing mix, cheese, carrots, mayo, relish and water in a bowl. Cover the bowl and refrigerate for 10 minutes.

2. Heat a large non-stick skillet sprayed with cooking spray on medium heat. Scoop tuna mixture, using about 1/3 cup for each cake. Gently flatten cakes using a spatula. Cook 3 minutes on each side or until golden brown on both sides, turning cakes over carefully.

Serves 6 (2 cakes each).

Oooh, I bet this would be good with canned salmon, too! My family loves salmon paties and with the seasoning in the stuffing mix, I bet it would taste lots better than just plain ol' saltines!

I don't know where you get your recipes or how you come up with some of this stuff, but they make total sense! Such great twists on the ol' stand-bys thet tend to get boring after a while. Thanks, Dawn! :)

You are very welcome, Lisa! =) I get my recipes from all over the place: magazines, cookbooks, email newsletters that I subscribe to & the online sources I have listed in my sidebar. =)

About This Blog

I find recipes everywhere. Online. In magazines. In cookbooks. On the back of boxes. After a while, it got difficult to remember where I found (or stashed) a particular recipe when I wanted to make it a second time. With the goal of wrangling them all in one coherent location that was easy to find and navigate--along with multiple requests from friends for this recipe or that one--this blog was born.
