Farmers Market Squash Saute

2 zucchini, sliced
2 yellow squash, sliced
2 cloves garlic, minced
1 tbsp olive oil
1/2 cup shredded mozzarella cheese
2 tbsp chopped fresh basil
2 tbsp grated Parmesan cheese

1. Cook squash in hot oil in large skillet on medium heat 3 minutes, stirring occasionally. Stir in garlic; cook 3 minutes or until squash is crisp-tender.

2. Remove from heat; stir in mozzarella and basil.

3. Sprinkle with Parmesan before serving.

Serves 4.

After a while, it got difficult to remember where I found (or stashed) a particular recipe when I wanted to make it a second time.
