Hashbrown Casserole

8 oz shredded cheddar cheese
6 large eggs
12 oz evaporated milk
1 tsp salt
1/2 tsp ground black pepper
26 oz frozen shredded hash brown potatoes
1 medium onion, finely chopped
1 small green bell pepper, diced
1 cup diced ham

1. Preheat oven to 350. Grease 13x9" baking dish.

2. Combine cheese, eggs, evaporated milk, salt and black pepper in large bowl. Add potatoes, onion, bell pepper and ham; mix well. Pour mixture into prepared baking dish.

3. Bake for 60-65 minutes or until set.

Serves 6 as a main dish or 12 as a side dish.
