Sausage & Spinach Pasta

12oz fusilli pasta
10oz frozen spinach, thawed and squeezed dry
12oz Italian sausage (sweet or hot, your choice), casings removed
1/2 cup sun-dried-tomato pesto

1. Cook pasta according to package directions.

2. While pasta is cooking, in a 12-inch skillet, cook sausage over medium heat 12 minutes or until browned, stirring to break it up with a spoon. Discard any fat. Add spinach; cook 4 minutes.

3. Reserving 3/4 cup cooking water, drain pasta. Add pasta and reserved water to skillet. Stir in pesto.

Serves 4.
